Prized for its excellent flavour, this is a trimmed, boneless cut from the diaphragm muscle. Great for grilling or seared in the pan, and popular in tacos, fajitas and stir-fries. Can also be slow-cooked as a tasty braising steak. Slice against the grain before serving to maximise tenderness.
